The nutritional yeast makes this pesto a vegan pesto but you can replace with grated Parmigiano.

For the Salad
2 courgettes/ zucchini, spiralized
½ cup walnuts, crushed
6 sundried tomatoes chopped into small pieces
Goddess Supergreen Pesto
1 bunch basil
1 bunch parsley
¼ cup pine nuts
1 peeled cored avocado
Juice of 1 lemon
1 clove garlic
½ tsp Himalayan salt
¼ cup extra virgin olive oil
¼ cup water (add more if required)
2 tbsp. nutritional yeast
½ tsp chili flakes (optional)
